Chicken Skewers With Mango Salad

A simple family dinner that can be easily put together. If desired, marinate the chicken in advance and then cook and prepare the salad when it's time for dinner. This recipe is for one serving, so if you're making it for the entire family, adjust the ingredient quantities accordingly.

Ingredients

  • 20mls lemon juice
  • 2 teaspoons tamari – gluten-free soy sauce (10 ml)
  • 1/2 teaspoon of fresh ginger, grated (2 grams)
  • 150 grams chicken breast fillets
  • 2 skewers
  • 5 mint leaves (2.5 grams)
  • approx. 1 cheek of mango, unseeded (100 grams)
  • 1/4 of a Lebanese cucumber (50 grams)
  • 1/4 of a medium red onion (25 grams)
  • 1 teaspoon of sweet chilli sauce (5mls)
  • 10mls lime juice

Method

Direction for preparing this dish

– Combine lemon juice, tamari, and half the finely diced ginger to create marinade
– Dice chicken breast and pour marinade over it, then place in refrigerator for 10-15 minutes
– Thread marinated chicken onto skewers
– BBQ or pan fry skewers for 2-3 minutes on each side until cooked through
– Prepare Mango Salad: remove skin and stone from mango and finely dice
– Finely chop onion, cucumber, and mint leaves, then combine in a bowl with mango
– Combine remaining ginger, sweet chili sauce, and lime juice, then pour over mango salsa
– Spoon salsa over kebabs and serve
– Note: If using wooden skewers, soak them in chilled water for 1 hour before use to prevent burning on the barbecue.
